Spaghetti Carbonara Our Way

Ingredients

  • 100 gms bacon, chopped
  • I/2 small onion, finely chopped
  • 1 tsp olive oil
  • 1 egg, slightly beaten
  • 75 gms Grana Padano, grated
  • Loads of black pepper, ground
  • 150 gms Spaghetti
  • 1 egg, fried sunny side up for garnish
  • Salt to taste

Preparation

Bring a large pot of salted water to a boil for spaghetti. When the water is heating, sauté the bacon and onion together in the olive oil in a large pan until well done.
Cook the spaghetti to an al dente consistency and then drain most of the water, but leave about ½ cup of water in the pasta.

Combine the gently beaten egg with Grana Padano cheese, and salt and pepper in a medium-sized pan. Add this mixture to pasta and water, and whisk continuously. Stirring is essential to prevent the mixture from turning into scrambled eggs. Add the bacon and onion mixture and mix it well. Serve with additional Grana Padano and freshly grated pepper. I like to top the pasta with a fried egg, but this is optional.

Note: Alternative pastas to use would be fettuccine or tagliatelle, instead of spaghetti, but this pasta does not work with penne or any other short-tube pasta as the sauce clings to the long strands.
